Whole beef, sliced in the store
Most places that sell cheesesteaks buy their steak frozen and pre-sliced. We buy whole beef and slice it here, by hand, every day. Same with the chicken breast that goes into our chicken cheesesteaks.
It costs more and it takes longer. It is also the whole reason the sandwich tastes like beef.
The steak
Frozen pre-sliced steak is usually chopped beef that has been formed into a block and shaved thin. It is cheap, it is consistent, and it is fast on the griddle. It also gives up a lot of water as it cooks, so it steams rather than browns. That is why a lot of cheesesteaks come out tasting flat no matter how much cheese goes on top.
We buy whole beef and hand slice it in the store. It browns properly on the flat top, and you get some crisp edges and some chew instead of one uniform texture from end to end.
The chicken cheesesteaks start the same way, with fresh chicken breast that we hand slice here. No pre-cooked strips out of a bag.
The lineup
Steak Sub
Chopped steak on a roll. Nothing else on it. This is the one to order if you want to find out whether a place can actually cook steak.
Steak & Cheese
Steak and white American. White American is the Philadelphia default for a reason. It melts smooth and it does not compete with the beef.
The Works
Green peppers, fried onions, mushrooms and white American cheese.
Pizza Steak
Topped with our homemade marinara and mozzarella. Somewhere between a cheesesteak and a slice.
Garden Steak
Topped with lettuce, tomato, onion and mayo. Cheese is an add-on.
Also on the roll
The hot side runs to the parm subs: chicken parm, meatball parm, sausage parm, and eggplant parm. There is also sausage with peppers and onions, and a chicken sandwich you can have grilled or fried.
The meatballs, the sausage and the marinara on those are all made here, from the same family recipes we use for the pasta dinners.
Cold, there are three: the Italian mixed with ham, salami, provolone and pepperoni, a turkey sub, and ham and cheese. All of them come with lettuce, tomato, onion, oil and vinegar.
Prices and the full list are on the menu page.
